Ingredients / Directions:
  • 1/4 pound salt pork (you can also subsitute bacon)
  • 2 onions diced small
  • 1 large green pepper diced fine
  • 1 red pepper diced fine
  • 2 cans tomato paste
  • 10 bay leaves
  • 1 Tbs. oregano
  • 1/2 tsp salt
  • 1 Tbs. key lime juice
  • 1 cups carrots diced fine
  • 5 conchs chopped fine
  • 4 cloves garlic minced
  • 2 cans petite diced tomatoes
  • 1 tsp. poultry seasoning
  • 2 Tbs. sweet BBQ sauce
  • 1/2 tsp. black pepper
  • 1 tsp thyme
  • 3 potatoes diced
  • 1 Tbs. dark brown sugar
  • 2 Tbs. Hurricane Citrus Hot Sauce

Dice and saute pork until soft. Add onions, garlic, green pepper, red pepper and cook until soft. Stir in tomatoes, carrots, poultry seasoning, bay leaves, BBQ sauce, oregano, salt, pepper, brown sugar. Add conch and 1 cup water. Stir. Add tomato paste, and hot sauce. Bring to boil then simmer for 2 hours. Add potatoes and cook until done. Add sherry or Dockside Hurricane Citrus Hot sauce when served. This is an old family recipe that is one of the best conch chowders you will taste! Enjoy!

Reminds my wife of home....
  This is a great recipe and so easy to make although the conchs took a little research to get here in Georgia, but I made this for my wife on her birthday and she said it reminded her of being back at home in Miami, Florida.
