- 1 large jicama, peeled and cubed
- 1 english cucumber, peeled and cubed
- 1 mango, peeled and cubed
- 1/2 pineapple, peeled, cored and cubed
- 4 ears of corn, kernels cut from cob
- 1/2 small red onion minced
- 1/4 cup cilantro leaves minced
- 1 jalapeno, stemmed and minced
- juice of 1 lime
- 1/4 cup fresh pineapple juice
- 1 teaspoon Mexico chili powder
- salt and pepper
In large bowl, combine all ingredients, toss well to coat. Serve cold. |
